Lemon Avocado Dip

For this healthy spin on guacamole, stick with light sour cream. It's lower in carbs than fat-free sour cream.

Ingredients

  • 1 ripe avocado, halved, seeded, and peeled

  • 1 tablespoon lemon juice or lime juice

  • ½ cup light dairy sour cream

  • 1 clove garlic, minced

  • teaspoon salt

  • 1 Lemon wedge

  • 4 medium red, yellow, and/or green sweet peppers, seeded and cut into strips

Directions

  1. In a medium bowl, use a fork to mash avocado with lemon juice. Stir in sour cream, garlic, and salt. If desired, garnish with a lemon wedge. Serve with pepper strips.

Tips

To make ahead: Prepare as directed. Cover surface of dip with plastic wrap; chill for up to 4 hours.
