Crustless Cheese Quiche

ounce package (2 1/2 cups)
frozen chopped broccoli
Nonstick cooking spray
refrigerated or frozen egg product
ground black pepper
low-fat cottage cheese (12 ounces), drained
shredded reduced-fat cheddar cheese (4 ounces)
feta cheese, crumbled (1/2 cup)
- Preheat oven to 350 degrees F. In a large saucepan cook broccoli in boiling water for 3 minutes; drain well and set aside. Lightly coat a 9-inch pie plate with cooking spray; set aside.
- In a large bowl, combine egg product, flour, and pepper. Stir in cottage cheese, broccoli, 3/4 cup of the cheddar cheese, and feta cheese. Spoon into prepared pie plate.
- Bake, uncovered, for 40 to 50 minutes or until a knife inserted near center comes out clean. Remove to a wire rack. Sprinkle with remaining cheddar cheese. Cool 5 to 10 minutes before serving. Makes 8 slices.
