Butter Rum Oatmeal Cookies

| 1/2 | cuppacked brown sugar* |
| 1 | teaspoonground cinnamon |
| 1/4 | teaspoonbaking soda |
| 1 | tablespoonlight-color corn syrup |
| 1 | teaspoonvanilla |
| 1 | teaspoonbutter flavoring |
| 1/4 | teaspoonrum flavoring |
| 1 | cupall-purpose flour |
| 3/4 | cuprolled oats |
| 1/4 | cupraisins |
1. Preheat oven to 375 degrees F. Lightly coat two cookie sheets with nonstick cooking spray; set aside. In a medium bowl, combine margarine, brown sugar, cinnamon, and baking soda; beat with an electric mixer on medium speed until combined. Stir in corn syrup, vanilla, butter flavoring, and rum flavoring.
2. Using a wooden spoon, stir flour into margarine mixture. Stir in oats and raisins. Drop dough by rounded teaspoons, 2 inches apart, on prepared cookie sheets.
3. Bake for 8 to 10 minutes or until lightly browned around edges. Transfer cookies to wire racks; cool. Makes 24 cookies.

Is the fiber content really 0 with having oats in the recipe?

4/16/2010 06:58:00 PM Report AbuseButter flavoring is found in the cake decorating sections.With diabetes it is the total carbs more than sugar grams that count, tho' you should strive to keep both as low as possible.Agave syrup is a good choice to replace corn syrup in this case, to keep cookies moist. It is lower on the glycemic scale and is fairly new to our market I think. I am going to use half butter and half light olive oil. Try to eat foods as God made them. They will do less harm to you than manmade concoctions.
