Ingredients

  • ½ cup granulated sugar

  • cup all-purpose flour

  • teaspoon salt

  • cup nonfat milk

  • 2 teaspoons finely shredded lemon zest

  • ½ cup lemon juice

  • 4 egg yolks

  • 6 egg whites

  • ¼ teaspoon cream of tartar

  • 1 Powdered sugar

Directions

  1. Preheat oven to 350 degrees F. Lightly coat six 8-ounce individual souffle dishes with cooking spray; place dishes on a baking sheet. Refrigerate until ready to fill.

  2. In a small saucepan, stir together granulated sugar, flour and salt. Whisk in milk and lemon juice until combined. Cook and stir over medium-low heat for 8 to 10 minutes or until mixture is thickened and bubbly. Stir in lemon zest. Remove from heat.

  3. In a large bowl, beat egg yolks with an electric mixer on medium to high speed for 3 to 5 minutes or until thick and lemon- colored. Stir milk mixture into yolks to combine.

  4. Thoroughly wash beaters with warm, soapy water. In another large bowl, beat egg whites with an electric mixer on medium to high speed until foamy. Add cream of tartar. Beat on high speed until stiff peaks form (tips stand straight).

  5. Gently fold egg whites into milk mixture. Evenly divide batter among the prepared souffle dishes. Bake about 20 minutes or until a knife inserted near the centers comes out clean. If desired, lightly sift powdered sugar over. Serve immediately.

* Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
