Lime-Ginger Sherbet

This beautiful and refreshing lime dessert has some surprising ingredients--avocado and ginger--which add to the texture and flavor of the sherbet. Cinnamon-sugar pita chips can be sprinkled on top of each serving for a welcome crunch.

Ingredients

  • 1 large avocado, halved, seeded, peeled and cut up

  • 1 cup fat-free milk

  • cup sugar (see Tip)

  • ¼ teaspoon finely shredded lime peel

  • cup lime juice

  • 2 tablespoons honey

  • 1 teaspoon grated fresh ginger or 1/2 teaspoon ground ginger

  • 1 Baked cinnamon-sugar pita chips

Directions

  1. In a blender, combine avocado, milk and sugar. Cover and blend until very smooth. Pour mixture into a 2-quart square baking dish. Stir in lime peel, lime juice, honey and ginger. Cover with foil and freeze for at least 6 hours or until firm, stirring occasionally so mixture freezes evenly.

  2. To serve, let stand at room temperature for 15 minutes. Using a fork, scrape over the top of the frozen mixture; divide scraped mixture among eight serving bowls. If desired, garnish with baked cinnamon-sugar pita chips.

Tips

Tip: If using a sugar substitute, choose from Splenda(R) granular or Equal(R) Spoonful or packets. Follow package directions to use product amount equivalent to 1/3 cup sugar. Nutrition per Serving with Substitute: same as below, except 79 cal., 11 g carb.
