Mexican Roll-Ups

Delicious and filling, these beef, tomato and pepper filled tortillas are the perfect option for an easy dinner.

Ingredients

  • 8 ounces extra-lean ground beef (95% lean)

  • cup chopped tomato (1 small)

  • cup chopped red sweet pepper

  • 1 tablespoon red wine vinegar

  • 1 teaspoon ground cumin

  • 1 teaspoon olive oil

  • 2 large heads 2 romaine lettuce leaves, large ribs removed

  • 2 (8 inch) whole wheat 96% fat free heart healthy tortillas, such as Mission brand

Directions

  1. In a medium skillet cook ground beef over medium-high heat until browned, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir tomato, sweet pepper, vinegar, cumin, and oil into meat in skillet.

  2. Place a romaine leaf on each tortilla. Spoon half of the cooked ground beef mixture on top of each lettuce leaf.

  3. Completely roll up each filled tortilla (see Tip). If desired, secure roll-ups with skewers.

Tips

Tip: If desired, before assembling the roll ups, tear off two 15-inch-long pieces of foil. Place a tortilla on each piece of foil. Continue as directed in Step 2. Roll the foil with each tortilla until completely rolled up. Seal one end. To eat, peel back the foil from the unsealed end.
