Shredded Pork and Green Chili Roll-Ups

Ingredients

  • 1 large onion, thinly sliced and separated into rings
  • 1/2 fresh poblano chile pepper, chopped
  • 1 tablespoon cooking oil
  • 2 cups Pulled Pork Master Recipe (see Recipe Center)
  • 6 8 - inches whole wheat flour tortillas, warmed*
  • 3/4 cup chopped tomato
  • 1/2 cup shredded reduced-fat cheddar cheese (2 ounces)
  • 1/3 cup light dairy sour cream
  • 3 tablespoons snipped fresh cilantro

Directions

  1. In a large skillet, cook onion and poblano pepper in hot oil over medium heat about 5 minutes or until tender, stirring occasionally. Stir in shredded pork. Cook and stir for 2 to 3 minutes or until mixture is heated through.
  2. Spoon about 1/2 cup of the pork mixture onto each tortilla. Top each with 2 tablespoons tomato, 1-1/2 tablespoons cheese, 1 tablespoon sour cream, and 1/2 tablespoon cilantro. Roll up tortillas. Cut in half to serve.

Tip

  • * To warm tortillas, wrap in foil and place in a 350 degrees F oven for 10 minutes.
