Avocado and Grapefruit Salad

It may sound like an odd combination, but once you try this green salad topped with creamy, smooth avocados and tart and tangy grapefruit, you'll want to make it more often!

Ingredients

  • 8 cups torn mixed salad greens

  • 2 grapefruit, peeled and sectioned

  • 1 avocado, pitted, peeled, and sliced

  • 2 tablespoons raspberry vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon water

  • 1 teaspoon sugar

  • teaspoon salt

Directions

  1. On a large serving platter or six individual salad plates, arrange the mixed salad greens, grapefruit sections, and avocado slices.

  2. For dressing, in a small bowl, whisk together vinegar, oil, the water, sugar, and salt. Drizzle dressing over the salad.

Tips

To make ahead: Prepare dressing as directed. Cover and chill for up to 24 hours. To serve, prepare salad. Whisk dressing; drizzle it over the salad.
