Diabetic Exchanges
- 8 cups torn mixed salad greens
- 2 grapefruit, peeled and sectioned
- 1 avocado, pitted, peeled, and sliced
- 2 tablespoons raspberry vinegar
- 2 tablespoons olive oil
- 1 tablespoon water
- 1 teaspoon sugar
- 1/8 teaspoon salt
1. On a large serving platter or six individual salad plates, arrange the mixed salad greens, grapefruit sections, and avocado slices.
2. For dressing, in a small bowl, whisk together vinegar, oil, the water, sugar, and salt. Drizzle dressing over the salad. Makes 6 servings.

Prepare dressing as directed. Cover and chill for up to 24 hours. To serve, prepare salad. Whisk dressing; drizzle it over the salad.
