Ingredients

  • 1 medium head radicchio, trimmed and coarsely chopped
  • 3 cups packaged fresh baby spinach
  • 1 medium pear, cored, quartered and thinly sliced
  • 1/2 medium red onion, halved and thinly sliced
  • 1/4 cup white wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon-style mustard
  • 1/8 teaspoon salt
  • 1/4 cup pine nuts, toasted

Directions

  1. In a large bowl combine radicchio, spinach, pear, and red onion; set aside. In a small screw-top jar combine vinegar, oil, honey, mustard, and salt. Cover and shake well to combine. Pour over radicchio mixture; toss to coat. Divide salad among four serving plates. Sprinkle with pine nuts.
