Ingredients

  • 2 teaspoons canola oil
  • 1 1/2 cups purchased sliced fresh mushrooms
  • 1 medium sweet onion (such as Vidalia or Maui Maui), quartered and thinly sliced
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground coriander
  • 1 24 - ounce package refrigerated mashed sweet potatoes

Directions

  1. In a large nonstick skillet, heat oil over medium-high heat. Add mushrooms and onion to skillet; cook about 8 minutes or until tender and lightly browned, stirring occasionally.
  2. Add cumin and coriander to mushroom mixture. Stir in sweet potatoes. Cook and stir until heated through.
