purchased sliced fresh mushrooms
medium sweet onion (such as Vidalia or Maui Maui), quartered and thinly sliced
refrigerated mashed sweet potatoes
- In a large nonstick skillet, heat oil over medium-high heat. Add mushrooms and onion to skillet; cook about 8 minutes or until tender and lightly browned, stirring occasionally.
- Add cumin and coriander to mushroom mixture. Stir in sweet potatoes. Cook and stir until heated through.
